Pumpkin Cake Recipe
Moist delicious cake with smooth cream cheese frosting to match! That’s what you get with this pumpkin cake recipe. It’s the ideal cake to make for the entire month of October, but the possibility of a craving for this cake could exist at any time of the year.
Following is the recipe for both the pumpkin cake and the cream cheese frosting. This pumpkin cake recipe also makes use of the pumpkin pie spice recipe and the fall nuts recipe that were explained in our posts earlier this month.

- Preheat the oven to 350°F.
- Combine the eggs, sugar, oil, applesauce and pumpkin until light and fluffy on medium speed with a mixer.
- Combine all the remaining dry ingredients and then add them to the wet mixture on low until combined.
- Spread the mixture into a 9 x 12 greased pan.
- Bake for 30 minutes.

Instructions for Pumpkin Spiced Buttercream Frosting Recipe
- Cream the butter with the cream cheese and sour cream in a mixer until light and fluffy.
- Add the Confectioners’ sugar and the spice mix slowly on low speed until mixed. If thinner frosting is desired, add a teaspoon of milk or cream.
- Once the cake has cooled, spread the frosting on top.
- Decorate each square with a fall nut (recipe here).
Store this moist cake in the refrigerator due to
the cream cheese frosting and enjoy it cold or at
room temperature.
This frosted pumpkin cake will keep well
for about 5 days if kept tightly covered in the
fridge.
