Cauliflower should be roasted in a hot oven for about 20 to 30 minutes to achieve a crunchy browed top side and a soft interior. The length of time needed to roast cauliflower depends upon the size of the cauliflower flowerettes or slices and the oven temperature used to roast the cauliflower. The time needed to roast cauliflower is detailed in the table below. Higher temperatures are recommended for roasting in order to provide a crispier exterior on the cauliflower, but other temperatures are given so that the cauliflower can be roasted along with other foods. Also keep in mind that fuller ovens (cooking several trays at once) will require slightly more cooking time than given in this table for the cauliflower to roast properly.

Yes, roasted cauliflower can be stored in the refrigerator for 4 -5 days, at which point it will have seeped enough liquid to change the consistency. Roasted cauliflower can be reheated in a 350°F oven for about 10 minutes to retain some of the crispness or microwaved for about a minute, depending on the amount of cauliflower, for a mushier result.
